Umu's Yoshniori Ishii spent nine years at the three Michelin-starred Kyoto Kitchen in Japan, followed by stints at the Japanese Embassies in Geneva and New York and as Omikase Chef at Morimoto restaurant. His artistry includes that of fisherman, potter and calligrapher, and this unwavering attention to detail is evident in every element of the Umu experience. Ishii’s hand extends from teaching his Cornish and Scottish suppliers humane fish preparation to flying in fresh produce from Japan daily.

Classical Japanese cuisine, in all its freshness and refined subtlety, is the raison d’être of London’s two Michelin-starred Umu. This is evidenced by its partnership with the Nama Yasai organic farm (the first of its kind in the UK) for the finest quality Japanese vegetables, fruit and herbs. Applying the culinary heritage of Kyoto to Cornish and Scottish line-caught fish, Umu's kitchen offers immaculate sashimi and dishes such as sweet red prawn tartar sushi, cured Northern Irish pollan, and sake-cured Langoustine. The restaurant also does a neat line in Wagyu beef, and a traditional Kaiseki eight course Japanese meal with prestige wine or sake pairings.

Alongside this elegant menu, Umu offers a similarly classical wine list; a consistent Three Star winner since their Awards debut in 2015, and praised by the judges this year for its range of mature vintages and “superb” sake selection.

The list is particularly strong in France, namely Burgundy, with a fabulous array of grands and premiers crus, and several mature vintages, from starry names such as Leflaive, Ramonet, DRC, Rousseau, Dujac, and Comte Georges de Vogüe. Top Bordeaux is also treated seriously, with many rare, older vintages, joined with a nice selection from the Rhône and a smattering of star producers from the New and Old Worlds.
